New recipe -Taco quiche

I have never made my own recipe, and technically haven't yet.  I planned to make a cheeseburger quiche, but I was afraid I didn't buy enough cheddar cheese for the other things I had to make for Christmas and I had leftover taco meat so I changed it up a bit.


Taco Quiche

Prep : 15 min. Bake: 35 min.
Yield: 6 Servings
Ingredients
1/2 pound taco meat (I used more, what ever I threw in the pan)
1/3 cup chopped onion (I used one large onion)
1/2 cup mayonnaise
1/2 cup milk
1/8 teaspoon dried oregano
1/2 teaspoon salt
1/8 teaspoon pepper
3 eggs
1-1/2 cups (6 ounces) shredded Mexican mix, divided
1 unbaked pie shell (9 inches)
Directions
In a skillet, brown ground beef and onion; drain and set aside. In a bowl, combine mayonnaise, milk, oregano, salt and pepper; beat in eggs. Stir in beef mixture and 1 cup cheese. Pour into pie shell.
Bake at 350° for 35-40 minutes or until set. Remove from oven and sprinkle with remaining cheese. Allow to stand 5 minutes before cutting. Yield: 6 servings.

New year, same old me.

I have been gone for a while.  Bought a domain, didn't see the need for it, so I am back on blogger.  I maintain other websites so it was just too much. 

I went back to teaching recently and I love it.  The break I took really helped pump me back up. 

I have fallen behind on my meal planning.  I have gained weight and my basement is still messier than I would like. 

I started this blog for accountability.  I will start to post my meal plan again.  That is all I am going to promise myself.  Starting Monday, December 31st I will have a meal plan up on here and orgjunkie.com.

We did make gingerbread houses this year.  Here is the beginning of one.  I want to spend more time with my kids before they are out of the house and honestly it won't be too long now.
